Ginger oat biscuits: A great snack for tea time of coffee breaks

It’s time to get those oven gloves back on because it’s time to bake something delicious. If you remember baking with grandma as a kid or picked it up later in life, you know how great oats are for crunchy cookies. Our ginger oat biscuits bring back that nostalgia and taste just as good as grandma used to make. They are also great as a holiday gift and each batch makes a whole lot of cookies.

Ginger oat biscuits tips

One of the most important things to remember is not to use too much golden syrup. This isn’t for flavour but can make your biscuits fall completely flat and affect their texture. To scoop, use a small ice cream scoop for the best results and don’t flatten them. You can also top your cookies with some seeds or nuts. The addition of ginger adds a great layer to the tasty biscuits.

Ingredients

  • 240 g butter

  • 1 level tbsp syrup

  • 1 tsp bicarb of soda dissolved in a tablespoon of water

  • 2 tea cups castor sugar

  • 2 tea cups self-raising flour

  • 2 tea cups oats

  • 2 tsp ground ginger

  • 1 pinch salt

Method

  • Warm the butter, sugar, golden syrup together. Mix in the remainder of the ingredients.
  • Put in small rough pieces on greased baking tray.
  • Bake at 170°C for 15 minutes.
  • When golden brown and flattened a bit, remove and let cool on cooling rack.
