Ginger shortcake: A yummy twist on golden shortbread

Everybody loves dessert and there are so many of us who love making and baking them. Shortbread, a golden buttery treat has always been a favourite thanks to the melt-in-your-mouth texture and butter flavour. Our ginger shortcake is a tasty twist on the conventional to bring you something delicious. You can also get creative with the recipe and make it your own with decorations.
Ginger shortcake tips
You don’t want to really roll-out the dough because it would flatten and wouldn’t be as crumbly or light. Spread it onto a shallow tin or pan for the best results. You can add a teaspoon of vanilla essence the the icing in the recipe below. You can also add fruits and whipped cream to the dessert and strawberries are the most popular. Stack large squares of your shortcake and fill them with icing or whipped cream.

Ginger shortcake recipe

- Shortbread base
100 g butter
30 g castor sugar
150 g flour
1 tsp ground ginger
- Icing
4 tsp icing sugar
1 level tsp ground ginger
3 level tsp syrup
- Decoration
flaked almond
whipped cream
strawberries
Method
- Cream butter and sugar, work in flour and ginger.
- Spread onto Swiss roll tin.
- Bake at 160°C until golden brown which is about 35 minutes.
- For the icing
- Melt butter and syrup over gentle heat. Add icing sugar and ginger.
- Pour over slab while both are still warm.
- Sprinkle with almonds.
