Sacher-torte: A rich chocolate cake for any occasion

Chocolate is often described as the ultimate dessert flavour and we completely agree. You can enjoy chocolate puddings, tarts and cakes with various intensities of this amazing delicacy. However, we want you to experience the Sacher-torte. This dessert is a chocolate cake, or torte of Austrian origin, invented by Franz Sacher, supposedly in 1832 for Prince Metternich in Vienna.
Sacher-torte tips
It’s a cake consisting of a dense chocolate cake with a thin layer of apricot jam between two halves and topped with dark chocolate icing. It’s also served with some whipped cream! The cake dough is quite dense, turning it into a type of tart. You can use the conventional apricot jam or our addition of plum jam. If you want to get creative, pop some pieces of fruit or nuts on top, however, it’s usually presented as a simple yet beautiful tart.

Sacher-torte Recipe

140 g butter
140 g sugar
5 whole eggs
100 g flour
140 g dark chocolate (at least 75%)
water
smooth plum jam
melting chocolate for icing
Method
- Beat butter and sugar until smooth. Add eggs one at a time, beating constantly.
- Heat chocolate with a little water or milk until it is a thick syrup. Cool chocolate and add to above mixture.
- Beat with an egg beater until very thick, slowly fold in sifted flour.
- Put in 25cm cake tin and bake at 177°C (350°F) for 25 minutes.
- When cold slice through and spread generously with jam, replace upper half.
- For the icing
- With a slab of chocolate softened, cover whole cake. Serve with whipped cream.
