Simple weeknight lasagna: A tasty comfort food recipe

Cooking for your friends and family is one of the most wholesome things you can do. The Italians as with many other cultures love cooking traditional foods for a family to feast on. Our simple weeknight lasagna is one of those recipes that you can whip-up in no-time and enjoy after it bubbles out of the oven. This meal is great for those weeknights when your family needs some comfort food.
Simple weeknight lasagna suggestions
To make the cheese sauce, make a simple bechamel or white sauce and add a cup of cheese. Your sauce is ready when the whisk makes deep streaks that take a moment to fill again. Layer the pasta as you want to with thick or thin layers. Lasanga is often served with a light green salad to cut through the richness of the cheese. Serve each person a nice thick slice and enjoy.

Simple weeknight lasagna recipe

6 carrots, grated
1 can tomato puree
2 large onions
1 wine glass sweet sherry
1 kg lean beef mince
Worchestershire sauce
2 tbsp tomato paste
3 bay leaves
cayenne pepper
salt and freshly ground black pepper
grated cheddar cheese
parmesan cheese
Method
- Brown the beef in the pot or saucepan and remove to set aside.
- Fry carrots, onions and garlic in some oil and a knob of butter.
- Add the beef back after deglazing with the sherry.
- Add the tomato paste and puree, a cup of stock or water along with the rest of the ingredients except the cheese. Simmer for at least an hour.
- Make a creamy cheese sauce or bechamel with a tablespoon of butter and flour melted together before slowly adding at least one cup of milk and whisking constantly until very thick.
- Cook the pasta if you’re using sheets.
- Layer with meat, cheese sauce and then pasta and repeat.
- Cover with a combination of cheddar and parmesan cheese on top.
- Bke in the oven until brown and bubbly. (about 20 minutes)
