Steak with cheese, onions and mushrooms for dinner parties
If you want to impress your guests with something special, a tender steak with cheese, onions and mushrooms will hit the spot just right.
South Africans love a good steak but it isn’t always great for a braai. Our high quality meat is excellent but fillet is often cooked best on a skillet for quick and even cooking. France does some of the best fillet dishes like filet mignon. Our steak with cheese, onions and mushrooms is a bit of a twist on the classic. A beautiful cut of fillet with a cheese sauce infused with onions, shellfish and mushrooms is on the menu for your next dinner party.
Steak with cheese, onions and mushrooms tips
For the best steak, the fillet should be cut against the grain and relatively thick so that it isn’t overcooked. Seer in a smoking hot pan and baste with butter and garlic. Crayfish can be quite expensive but some cooked prawn tails work just as well to flavour the cheese sauce which isn’t a bechamel. Serve with some fried colourful carrots and crispy roasted potatoes.

Steak with cheese, onions and mushrooms recipe

500 fillet fillet steak or medalions
1 medium onion
4 tbsp butter
115 g strong cheddar cheese
2 glasses sherry
2 tbsp tomato paste
1 crayfish tail, cooked (prawn tails work too)
125 ml cream
Method
- For the steak
- In a smoking hot cast iron skilled, seer the steak on one side and when flipping it over, add butter to the pan and baste as it cooks. When done, set aside under foil and let rest.
- For the sauce
- Grate the onion very finely and fry in 2 tablespoons of butter.
- Add mushrooms grated cheese and a glass of sherry with the tomato paste. Simmer until creamy.
- Add diced crayfish or prawns and the rest of the sherry. Simmer for 5 minutes.
- Stir in the cream and heat together.
- Serve over the steak.
