When it comes to avocados, we all have our favourite way of enjoying them, be it on toast with eggs, in a fruit bowl or as guacamole. However, avocado has another great use and it’s that you can use the shells as bowls. Our stuffed avocado supreme recipe is easy to put together with any pantry ingredients you might have. Our recipe gives you a running start with some great stuffing ideas for a fully-loaded avocado treat.

Stuffed avocado supreme suggestions

When scooping out the avocado flesh, add some lemon juice to help stop it from browning as it also adds some zest to the taste. Prawns cook quickly in a hot pan, especially if you’ve removed the shells. Bechamel sauce is made by melting one tablespoon of butter and another of flour until flour smell goes away. After which, you can slowly add one cup of milk and continue whisking until thick. Remember to season everything with salt and black pepper.

Ingredients

  • 2 ripe, but firm avocados

  • 100 g cooked and peeled prawns

  • 50 g finely grated cheddar cheese

  • 125 ml bechamel sauce

  • 12.5 ml mayonnaise

  • salt and black pepper

  • cayenne pepper

  • parsley

Method

  • Scoop out avocado flesh (but not all) and mix with mayonnaise and bechamel sauce.
  • Add prawns and season to taste.
  • Place mixture in prepared avocado shells.
  • Sprinkle with cheese and a dash of cayenne pepper.
  • Brown under hot grill and serve, garnished with parley and lemon.
