Each bite is a sweet sensation and a chocolaty, coconut indulgence which will tempt you pop another one in your mouth after tasting the first one. And the best part is that this vanilla lamingtons recipe comes together much faster and easier than you can image. All thanks to this ready-made Snowflake mix. All you have to do is add a few more ingredients and you have a delicious treat!
After preparing the cake, allow it to cool down and cut into equal squares. Then prepare the delightful chocolate coating. Dip each square in the coating and cover in desiccated coconut and you are all set.

1 kg Snowflake Easymix vanilla cupcake
4 extra-large eggs
250 ml cooking oil
400 ml milk
1 kg Icing sugar
480 ml milk
8 tablespoons unsalted butter, melted
480 g desiccated coconut
160 g cocoa powder
- Follow Instructions on the packet, but bake as a single cake in a 5 – 6 cm deep square cake tin.
- Cool completely and cut into equal squares.
- Sift the cocoa powder and icing sugar, then add melted butter and milk. Stir until smooth.
- Carefully and quickly dip each piece of cake into the chocolate, letting the extra chocolate drip off and then cover in coconut.
- Transfer to a cake rack to dry and cool.
