Burgundy pears dessert
If you don’t have burgundy, a sweet red wine works great. You can also reduce the poaching liquid into a thicker sauce to pour over when serving. When you’re using food colouring, use very little at a time until you get the colour you want. It’s a bright bit of cooking with loads of variations. The combination of Kirsch and cherries adds loads of sweetness with the spiced pears. Serve with cream or ice cream and fresh cherries with a drizzle of sauce.
