Baking is one of the real joys of life if you love food. It’s even more fun when you get new ideas, even if they include flavours that you’re familiar with. Carrot cake is a spiced bit of goodness but did you know that you can turn them into more than that? Our carrot scones are versatile and tasty, perfect for breakfast, tea time or even dessert with your friends and family. With so many topping options, you’re set for a lot of baking fun.

Carrot scones toppings

Like with regular carrot cake or cupcakes, you can make a smooth cream cheese frosting to spread onto your scones. However, for a different treat and a bit of zest, try some homemade lemon curd. You can also go classic scone toppings with jam and whipped cream or substitute the jam for fresh fruit. When it comes to simplicity, just a dollop of butter on your scones go well with a cup of tea or coffee.

Ingredients

  • 1 cup sugar

  • cup flour

  • 1 tsp baking powder

  • 1 tsp ground cinnamon

  • 1 tsp vanilla essence

  • ¾ cup cooking oil

  • ¼ cup seedless raisins

  • 1 cup carrots, grated

  • 2 eggs, well-beaten

  • salt

Method

  • Cover raisins with boiling water and let cool. Drain well when cooled.
  • Coat raisins with 1 teaspoon of flour.
  • Mix the rest of the dry ingredients together and then add the well-beaten eggs.
  • Fill greased muffin tins halfway and bake at 190°C for 12-15 minutes.
