Chilled coffee soufflé: The perfect start or end to a dinner party
When it's time to put together a weekend feast, end it off with a chilled coffee soufflé. It's truly as delicious as it sounds.

The weather is calling for more dinner parties and every dinner party needs a big finish. Soufflé is most well known as a French starter with cheese, but our chilled coffee soufflé only looks the part, but is a delicious treat. There is no stressful baking needed here but the real challenge is not to eat everything out of the bowl. It’s a great treat to finish off any braai or fancy dinner party this weekend.
Chilled coffee soufflé
Coffee and chocolate is always a great combination and this recipe is no different. It comes together very easily and you can even put the mix in a piping bag to help with presentation. When serving, add layers of cookies and cream with a big dollop of cream on top. You can also enjoy it with ice cream and a few nuts or fruits. The texture is smooth and luxuriously sweet, everything you look for in a dessert.

Chilled coffee soufflé recipe

1 tin ideal milk
3 tbsp cocoa powder
2 tbsp instant coffee
brandy, to taste
¾ cup sugar
¼ cup boiling water
1 dsp gelatin
Method
- Beat well-chilled Ideal Milk until light and fluffy.
- Add the sugar, coffee, cocoa and brandy with the gelatin which has been dissolved in the boiling water.
- Beat well and then pour into a glass serving bowl and chill.
- Serve with cream.
