Lemon tea cakes: An iconic sweet treat to enjoy with friends

When the weather is gloomy or sunny, it’s always time for tea with friends or as you wake up watching the sunrise. Whichever way you enjoy your tea, a snack is always a great addition. Our lemon tea cakes are an easy homemade treat that will make any tea time feel like a royal High Tea. You can even make your own lemon curd in this easy pastry recipe. It’s a sweet and tangy treat that’s also great on a dessert platter.
Tips for your lemon tea cakes
When mixing the butter with flour, the butter should be like small peas for a light and crumbly pastry. Leave the pastry in the fridge for a while to set and it also helps when rolling out. You can also make your own homemade lemon curd filling with a recipe we’ve posted before. The topping is like a buttery icing and you can also top it with small berries or whipped cream. They really are as tasty as they look.

Lemon tea cakes recipe

- For the pastry
180 g butter
2 cups flour (brown or plain, or a combination of both)
1 tsp salt
4-6 tbsp cold water
- For the cake topping
homemade lemon curd
2 eggs
1 cup sugar
1 cup self-raising flour
½ cup milk
1 tbsp butter
Method
- For the pastry
- Sift flour, salt and add butter cut into small pieces. Rub between fingers until crumbly.
- Add enough cold water to blend into soft dough, not too wet. Allow to stand in cool place for about 15 minutes.
- Roll out on floured board and cut into rounds large enough for patty pan cups.
- Lemon curd filling
- Fill each pastry cup with a scant teaspoon of home made lemon curd. Too much filling will cook out of the sides, so rather fill with a little over half a teaspoon than a full spoonful.
- For the topping
- Place milk and butter in pan and heat together until milk has scalded and butter melted.
- Meanwhile beat eggs until fluffy and add sugar. Beat well.
- Add flour and mix in well then pour over hot milk and butter. Mix quickly for a few seconds until well blended.
- Spoon mixture into cups until level with sides of pastry cups.
- Cook in oven at 200°C for approximately 15 minutes or until cooked.
