The season of pumpkins might not be during spring for South Africans but Halloween is still celebrated. You can still find great pumpkins all around and bake some pumpkin muffins. These bright and tasty baked treats are great for coffee dates and parties with your friends. They’re moist and the perfect opportunity to decorate them for events is strong and will unleash your creativity.
Serving suggestions for your pumpkin muffins
You won’t need to use fresh pumpkins for this recipe and using the best quality pumpkin puree often used for pies is the best idea. You can leave out the raisins in the recipe and include some crushed nuts like almonds and walnuts. Sprinkle some of these nuts over the top of the muffins before baking too. Decorate your pumpkin muffins with nuts or icing. Serve them with butter and a hot cup of tea or your favourite latte.

Pumpkin muffins recipe

1 egg
½ cup milk
½ cup cooked pumpkin puree
50 g butter, melted
1½ cups flour
2 t baking powder
½ tsp ground cinnamon
½ cup castor sugar
½ tsp ground nutmeg
¾ cup seedless raisins
Method
- Preheat oven to 200°C.
- Grease 12 deep muffin tins.
- Beat egg slightly. Stir in milk, pumpkin and margarine. Blend well.
- Sift dry ingredients and stir into other ingredients just enough to combine. Batter will be slightly lumpy.
- Stir in raisins.
- Spoon into muffin tins.
- Bake for 20-25 minutes.
