A great family lunch often includes a roasted leg of lamb, pork or beef but chicken could be the most popular. Chicken is accessible as most people enjoy that over the others and can be cooked with almost any flavour. Our roast chicken with almonds recipe is a great example of simple cooking with loads of flavour. Served with potatoes, carrots and a love of cooking, your family will be smiling with each bite.
Roast chicken with almonds tips
If you want an evenly cooked chicken, flatten it out by removing the back bone and making it spatchcock. This will expose as much of the skin the the oven as possible for even browning and crisping. You can also use individual chicken pieces if you don’t want to cook a whole chicken. For crispier skin, rub the skin with salt and pepper and let it rest open in the fridge overnight before cooking.

Roast chicken with almonds recipe

1 whole chicken
1 clove garlic, peeled and chopped
1 onion
zest of 1 lemon
120 g butter
120 g blanched almonds
500 g onions
30 g brown sugar
500 g potatoes
watercress
Method
- Pat the chicken dry and stand on a rack in·a roasting pan. Make small nicks in the skin and insert a piece of garlic in each. Peel the onion and put inside the chicken with the lemon peel.
- Rub the chicken liberally with half the butter and bake in centre of the 180°C oven for 1 hour 15 minutes.
- Baste well during cooking. Sprinkle with blanched almonds 15 minutes before end of cooking time.
- Peel the onions and glaze in the remaining butter. Add the sugar and cook gently until browned and soft. Brown the boiled potatoes in the same way.
- Arrange chicken on serving dish with onions and potatoes and almonds on top. Garnish with watercress. Serve with cooked carrots.
