Sardines with mustard sauce: Great seafood braai starter
When the sun is out, you don't want to cook too long. However, don't stop yourself from having a braai with a sardines with mustard sauce starter.
Summer is in full-swing and it’s time for a braai. However, sometimes you want to try something different and seafood is quicker to grill and always delicious. Grilled sardines or herrings are often enjoyed all over the world as a snack, especially along the South African coast. Our sardines with mustard sauce is crispy, light and the perfect way to get the feast started.
Sardines with mustard sauce tips
You can now easily get fish that has already been cleaned so your job is already easier. If you have smaller fish, the heads are however often kept on. The sauce is a quick white sauce that’s creamy and perfect for dipping. The fish are great on a hot skillet but even better when thrown onto the braai. Serve with the mustard sauce and some jalapeno poppers or fried chilies if you want to go the Mediterranean route.

Sardines with mustard sauce recipe

4 large herrings/sardines
salt and pepper
30 g butter
30 g plain flour
2 tsp mustard
1 pinch curry powder
500 ml fish stock or water
1 lemon, cut into wedges
sprigs fresh parsley
Method
- If the fish is completely fresh, remove heads and entrails from fish. Wash well. Remove scales, cut off fins and gills. Season well.
- Make 2 slits on each side of fish and grill for 10 minutes.
- For the sauce
- Melt butter, add flour, mustard and curry powder. Mix well and cook for 2-3 minutes.
- Remove pan from heat and add stock or water, stirring all the time. Return to heat and bring to the boil, stirring until thickened. Adjust seasoning.
- Arrange fish on large platter. Garnish with lemon wedges or slices and parsley sprigs. Pour sauce into a decorative line over fish.
