I’ve always had a soft spot for Mexican corn dishes like esquites and elotes because they capture all the sweet, smoky, creamy, and tangy flavors at once. So, the convenience of my latest ALDI freezer find—Season's Choice Steamed Elote-Style Corn—caught my attention right away.

The moment I saw this bag of fire-roasted goodness, it was destined for my home. If there’s one thing I can’t resist, it’s a shortcut that doesn’t skimp on flavor. 

How I Cook ALDI's Elote-Style Corn

The instructions on the bag suggest steaming or boiling it, but I much prefer sauteing because it browns the corn a bit, upping its roasted flavor. I just heat a skillet over medium-high heat, add a bit of butter and olive oil, and saute until it browns in places and cooks through. It takes just a few minutes. Once it tastes like it's been cooked on a grill, it’s ready! I use it to add flavor and substance to a myriad of dishes. 

I first added it to tacos. Just spooning it onto a warm tortilla with some grilled chicken, guac, and cheese made it taste extra delish. As I was eating it, I thought it would be great in other Mexican dishes like burritos, quesadillas, and enchiladas.

One of my family’s favorite meals is a Tex-Mex style “taco salad.” I usually put out a spread of chopped romaine lettuce, black or pinto beans, leftover ground chicken, diced tomatoes, guacamole, pickled onions, a punchy dressing, some tortilla chips, and sometimes even roasted peppers, blistered shishitos, or smoky, roasted cauliflower to increase the veggie intake.

Then, I let everybody build their own salads. When I have corn, it’s always a celebrated addition. I’ll buy a couple of extra bags of this corn just to keep on hand for this purpose. The following day, we use taco salad leftovers as toppings for rice bowls, but the corn would complement any grain. And as much as I adore these dishes, I’m already dreaming about trying ALDI's frozen corn as a garnish for soups or scattering some over a plate of nachos

How To Upgrade ALDI's Elote-Style Corn

The corn is sweet, the cheeses are creamy, and that kick of chili spice ties everything together, but when it’s steamed, the flavors are a little understated. If you’re still keen on steaming but want to add a bit more pizzazz, try any of the following: a squeeze of fresh lime juice and some extra salt, a sprinkling of crumbled cotija or feta just before serving, a dash of chili powder or Tajín, a scattering of chopped fresh cilantro or green onions, or a cheeky sour cream drizzle.  Any of these low-effort additions will do a lot to amp up the flavor.

Perhaps most importantly, this corn is a huge time-saver for a busy, working mom. In a world where weeknights can get chaotic, knowing I can have this ready in minutes is reason enough to stock it in my freezer. However, as with most ALDI finds, I know it won’t last. So, if you find yourself in ALDI, grab a bag or two to keep in your freezer to use when the time is right. You’ll be glad you did.
