Summer is here early and it’s time for a tasty light salad for lunch. Salads also don’t need to be cooked so you won’t be sweating in front of the stove. Our simple avocado and grapefruit salad with a classic French dressing is simple and delicious. It’s also a great recipe that you can add to but the soft avocado and tangy grapefruit works very well together as well as providing all of those important healthy nutrients.
Avocado and grapefruit salad tips
Avocado is a superfood for a reason as it has loads of great vitamins and minerals but most well known for those healthy fats. They are great for your joints and immune system. The grapefruit is packed with vitamin C and adds some colour to your bowl. You can boost your salad by adding some tomatoes, sliced peppers and some feta cheese just for the tastiness. The simple French dressing is a great addition and can be stored in the fridge.

Avocado and grapefruit salad recipe

2 avocados
2 large grapefruit
lettuce
watercress
- For the French dressing
French mustard (Dijon)
1 tbsp lemon juice
salt and freshly ground black pepper
1 pinch sugar
3 tbsp olive oil
1 tbsp vinager
- Extras
cherry tomatoes
feta cheese
Method
- Slice the avocado flesh and divide the grapefruit into segments.
- Neatly place the fruits on the lettuce and top with cress.
- For the French dressing
- Thoroughly mix all of the ingredients together and serve alongside the salad.
