Bananas Foster and ice cream for a decadent dessert
It's time for a decadent, sweet and spectacular dessert. Bananas Foster is a great dessert for those who love putting on a food show.

Sometimes a dessert comes along that just inspires. Yes, with fire, the intrigue is even stronger and Bananas Foster never disappoints. An American dish from New Orleans, it is made with a combination of bananas, brown sugar, cinnamon, rum, banana liqueur and served with vanilla ice cream. It is then set on fire after the initial cooking, making a spectacle of it while adding some extra flavour.
Bananas Foster tips
When baking, try and use a cast-iron pan that you can put into the oven and has a handle. We do advise caution when working with open flames. So, use protective gear like gloves and hold the pan far away from you and any spectators. You can add banana liqueur to the sauce for some more banana flavour. Serve with vanilla ice cream and pour some more sauce over the deliciousness.

Bananas Foster recipe

6 bananas
4 tbsp brown sugar
1 pinch nutmeg
2 tbsp brandy
juice of 2 oranges
½ tsp cinnamon
1 tbsp butter
vanilla ice cream
- Optional
50 ml banana liqueur
Method
- Peel bananas, split in half along their length.
- Place them in a buttered oven-proof dish.
- Mix the orange juice, sugar, cinnamon and nutmeg before pouring over the bananas. Dot with some pieces of butter.
- Bake at 175°C for 8 minutes or until bananas are just tender.
- Baste once or twice during cooking.
- Remove from the oven and sprinkle with warm brandy. Set alight for a few seconds.
- Serve with ice cream.
