We have such great summer weather in South Africa and it already starts in spring. The only way we like to cool down is throw ourselves into pools and the glorious ocean waves. However, there’s one more way to stay cool and enjoy the moment and it’s with ice cream. Our ice cream with rum sauce is an easy fruit infusion with a kick of your favourite rum, another well-known summer addition to any occasion.

First of all, you can use your favourite dark or light rum. Choose each depending on how rich or sweet you want it to be. The dark rum goes great with dark fruits like dates and raisins while the light rum goes the other way, like when using berries. You can also adjust the amounts of everything and remember to have some crunchy nuts for decoration when serving.

Ice cream with rum sauce recipe

1 cup mixed fruit (raisins, currents, sultanas, etc.
cherries
mixed nuts, crushed and chopped
1 cup water
15 ml rum
¼ cup sugar
1 heaped tbsp butter
Vanilla ice cream
Method
- Simmer the water, fruit, sugar and butter for an hour.
- In the last 10 minutes, add the rum along with the cherries and nuts just before serving.
- Serve warm with vanilla ice cream.
