Everybody loves brunch. A fully-loaded breakfast in the late morning which can sometimes have an adult beverage and a whole lot of fun conversation. For brunch, breakfast gets turned up a bit and often has some flavour upgrades. Our shellfish pancakes are the perfect meal for those get-togethers with your best friends. It’s a delicious meal that pairs perfectly well with a mimosa in the morning.

The shellfish don’t just have those great flavours but provide protein and energy for a long feast. The bechamel sauce turns it into a beautifully rich meal that needs a tasty drink to go along with it. You can fill and cover the pancakes with the sauce and maybe add some cheese on top if you’re adventurous. I’ts a meal best enjoyed outdoors and shared with your best friends and family.

Ingredients

  • For the pancakes
  • 125 g flour

  • 2 eggs

  • 1 cup milk

  • 1 pinch salt

  • 1 tsp melted butter

  • For the filling
  • 370 g large prawns

  • 455 g mussels

  • 1 tin crab meat

  • For the sauce
  • 40 g butter

  • 40 g flour

  • 425 ml milk

  • 145 g grated cheese

  • salt

  • pepper

  • paprika

Method

  • Mix the ingredients for th pancakes and leave to stand for 2 hours.
  • for the filling
  • Cook and shell the prawns.
  • Open the mussels and let them cook before removing from the shells.
  • Bechamel/ white sauce
  • Melt the butter and flour until flour smell goes away. Slowly add the milk and whisk continuously.
  • When it thickens, add the cheese, salt, pepper and paprika. Whisk until thick.
  • Pancakes
  • In a warm pancake pan, add a ladle of pancake batter and let it spread out into a thin crape and brown on both sides.
  • Put fillinginto each and roll up.
  • Place into greased ovenproof serving dish.
  • Bake in 180°C for 10 minutes.
