Sweet and sour sausages: A twisty meal made with leftovers

Breakfast isn’t just an important meal for the day but it’s often the tastiest. A great breakfast usually has some good ol’ fat and protein but you can still add some vegetables to the mix. This local version of bangers and mash is a great way to start your day, especially if you have leftovers from yesterday’s braai. It’s a dish you can enjoy for breakfast, lunch or dinner with your hungry family.

Sweet and sour sausages tips

If you’re using leftovers, it’s especially great to chop the sausages or boerewors into bite-sized pieces. The sweet and sour syrup is simple to make and can be made while you’re making fresh sausages when that’s your process. The sauce is great with the sausages but if you make some creamy mashed potatoes, the sauce is even better. YOu can add a sprinkle of chili flakes to the sauce if you want to give it some spice.

Ingredients

  • 1 kg beef sausages or sectioned boerewors

  • 1 green pepper

  • 1×400 g tinned pineapple chunks

  • 100 ml vinegar

  • 40 ml tomato sauce

  • 2 medium carrots, sliced

  • 2 onions

  • 40 ml brown sugar

  • 30 ml Maizena

  • 12.5 ml soy sauce

  • salt and black pepper

Method

  • Cook sausages until brown in a pan or on the braai.
  • Place carrots, chopped onion, salt, pepper and some water into a pan. Simmer for 10 minutes or until tender. Drain and pix with drained pineapple chunks.
  • Add 500ml water and simmer to a sauce consistency.
  • Heat syrup, vinegar and tomato sauce until boiling. Mix Maizena with cold water and add to the syrup. Boil for a few minutes and reduce.
  • Add soy sauce and vegetables.
  • Add the sausages back and heat through.
  • Serve with mashed potatoes.
