Dark chicken casserole: A simple yet delicious weeknight meal

Everything good tastes like chicken and our dark chicken casserole is one of the best. The recipe doesn’t just refer to beautiful golden pieces of chicken but dark vegetables used in the recipe. Chicken and mushrooms are a great combination but we have added a bit of a surprise with some dark olives. Braising chicken in a beautifully seasoned sauce provides loads of great flavour that your guests will enjoy and run back to after their first serving.

Dark chicken casserole tips

You can cook the chicken pieces in two different ways. Either roast them in the oven for 45-minutes to an hour or brown them in the casserole dish with some butter. You’ll be layering flavours by cooking the dish in bits and then adding them all together before putting it into the oven. Get creative and add some other vegetables like broccoli or green beans to the party. Serve your casserole with rice and a side salad for some freshness.

Ingredients

  • 2 chickens, jointed and roasted

  • 1 medium onion

  • 500 g mushrooms

  • 1 cup finely chopped dark olives

  • 50 ml sherry

  • 2 cloves garlic

  • 1 cup dry white wine

  • 2 bay leaves

  • 125 ml cream

  • 1 cup grated cheddar cheese

Method

  • In a heavy Dutch oven or casserole pot, brown the chicken pieces on all sides with some olive oil and butter. Remove and set aside.
  • In the pot, brown the onions, garlic, mushrooms olives and when browned, deglaze with sherry and scrape any chicken bits from the bottom.
  • Add the white wine, bay leaves and cream. Simmer for about 5 minutes.
  • Add the chicken pieces back with the cheese and simmer for another 20 minutes or longer until tender.
  • Place partially covered in a 180°C oven for 20 minutes.
