Ginger chicken: A comforting family meal made easy

Cooking for your family can be one of the most wholesome things to do. Providing dishes that reflect everybody’s favourites with a twist every so often is a good idea so that nobody gets bored. Sometimes, that just means adding one extra ingredient and in this case, it’s ginger. Our ginger chicken casserole is perfect for a spring evening when it’s still a bit cool and you want some comfort food.

Ginger chicken tips

Depending on your skill or availability, you can either butcher the chicken yourself or just get chicken pieces from the store. You can use fresh or pickled ginger for this recipe depending on the intensity you want to include. Like with many proteins, you want to brown the chicken a bit before cooking the rest. This layering of flavours helps provide a more complex dish and highlights each individual ingredient. This dish is best served with rice.

Ingredients

  • 1 chicken, cut into 6-8 pieces at the joints

  • 125 g butter

  • 1 cup chicken stock

  • 3 slices preserved/pickled ginger, chopped

  • 2 cloves garlic, minced

  • ¼ cup ginger syrup

  • lime juice

  • 3 tbsp cold water

  • 1 tbsp Maizena (corn starch)

  • chopped parsley

  • salt and freshly ground black pepper

Method

  • Brown chicken pieces in butter in heavy pan or casserole dish. Season with salt and pepper. 
  • Add garlic and cook until lightly browned (less than a minute).
  • Stir in chicken stock and allow to cook for 25 minutes or until tender. 
  • Remove chicken pieces to warmed casserole and keep warm.
  • Add ginger syrup to sauces left in the pan. Add sliced ginger and a little lemon juice.  Simmer for 10-20 minutes.
  • Mix cornflour with a little cold water and add to the sauce.
  • Stir until it thickens then add some chopped parsley.
  • Add cooked chicken and heat it all up.
